1 lb. ground beef
1 t. parsley
1/2 c. bread crumbs
1 tsp. garlic powder or fresh garlic ( 2 cloves )
1 egg
1/8 c. pecorino romano cheese
water
salt
pepper
dried bread crumbs or Italian seasoned for coating loaf
Kitchen Bouquet

Directions:
Directions:
Combine all ingredients. Add water until feels light but still holding together. Form into loaf, then coat with bread crumbs. In a large skillet, heat olive oil. Add loaf and brown very well on both sides. This is crucial or the loaf will fall apart. Use two spatulas. Once brown, add water to the pan to cover the loaf. Cover and reduce heat; cook for 45 minutes.
Juices in the pan can be used for gravy.
Grandma usually adds more water and kitchen bouquet to make the gravy by adding cornstarch to cold water then adding the mixture to the juices until reaching the desired thickness.

Every family has their own meatloaf recipe. This is also true for our family. Meatloaf is great right out of the pan at dinner time as well as on sandwich using some of grandma's bread when sneaking into the kitchen at midnight.
