1 cup chopped cooked chicken
1 onion, roughly chopped
200 g sausagemeat
2 eggs
1 tbsp. tomato sauce
1/2 cup chopped parsley
salt
pepper
2 hard-boiled eggs

Directions:
Directions:
Remove chicken from bones. Put chicken and onion into the bowl of a food processor or through a mincer. Process or mince until finely chopped. Add sausagemeat. Pulse to combine. Add eggs, tomato sauce, parsely, salt and pepper to taste. Process to combine. Press half the mixture into an 18 cm. loaf tin. Shell the hard-boiled eggs and place on top of chicken mixture. Cover with remain-
ing chicken mixture. Cook at 190 C for 40 mins. or until juices run clear when tested.
Serve hot or cold.
