1 c crushed cornflakes
2 tsp seasoned or plain pepper
1/4 tsp salt
4 egg whites or 2 whole eggs
1/4 c water
6 orange roughy fillets (4 oz each)
1/ c flour

Directions:
Directions:
In a shallow dish, combine the cornflakes, pepper and salt. In another shallow dish, beat eggs or whites and water. Sprinkle fish with flour; dip in egg mixture, then coat with cornflake mixture. Place on a baking sheet coated with nonstick cooking spray or foil. Bake at 425 for 9-11 minutes or until fish flakes easily with a fork
