2 lbs. russet potatoes, scrubbed, cut into wedges
2 onions, cut into chunks
1/3 c. olive oil
1 envelop onion soup mix
1 t. dried thyme, crumbeld
1 t. dried oregano, crumbled

Directions:
Directions:
Preheat oven to 450. Combine all ingredients in large roasting pay. Toss well. Bake until potatoes are crisp and golden brown, stirring occasionally, about 1 hr. 10 mins. Seaston with salt and pepper.
