2 large yellow bell peppers
2 large green bell peppers
3 large red bell peppers
Olive Oil
1/4 cup capers
1 cup pitted Gaeta black olives
5 garlic cloves chopped
6 fresh basil leaves finely chopped
1 tablespoon finely chopped Italian parsley
1 cup dried bread crumbs
Salt and pepper to taste

Directions:
Directions:
Preheat oven to 350 degrees
Cut peppers into thin slices length wise or into 1 inch squares.
Coat the bottom of a shallow 9x12 baking dish with olive oil. Place peppers in dish and sprinkle with capers basil, garlic, parsley, olives, bread crumbs and a drizzle of olive oil. Season lightly with salt and pepper. Toss the ingredients and smooth evenly.
Bake in a preheated oven for 45 minutes. Serve at room temperature.
I often substitute my homemade frozen pesto which is made of basil, parsley, garlic, and olive oil for those ingredients in winter when fresh basil is not availible.
