cup rice-wine vinegar
cup white sugar
1Tb. minced, peeled gingerroot
teasp each hot-red-pepper flakes and salt
4 cups very thinly sliced red cabbage
3 carrots, shredded
tsp dark sesame oil
2 scallions, sliced on the diagonal

Directions:
Directions:
In large bowl, combine vinegar, sugar, ginger, pepper flakes and salt.
Whisk to dissolve sugar; add cabbage and carrots
Cover; refrigerate at least 2 hours, but no more than 4 hours.
Stir occasionally, until cabbage softens slightly.
To serve: drain; sprinkle with oil and scallions.

Makes 6 servings. Per serving: 64 calories, 0 fat, 0 cholesterol, 197 mg sodium !
