Chop garlic and shallots. Saute in butter. Rough chop
shrooms and add to pan. Add wine , salt and pepper. Cook
for 7 minutes. Cool to room temperature and add parsley,
chive and goat cheese.
If you haven't worked with filo, follow directions on package
for thawing. Pull thawed filo out and lay out on the counter,
cover with plastic wrap and then a damp towel. If you do this
and keep it covered, it works well. If not.........
Lay out one piece of filo, brush with melted butter and add
another sheet, repeat til you have 3 layers. Place a row
of the filling along one edge of the sheet. (about 3/4 to 1" in
diameter). Roll up, pulling in the edges. Brush with butter at
the seam. Repeat til you have used all of the filling.
Score the rolls at about 1 1/2 " intervals. Bake at 350
degrees til golden brown. Allow to cool slightly then cut
into pieces and serve.
