Directions:
Slice pickles thin with peelings on. Put in brine of 1 gallon water and 1 pint salt for 8 days. Drain and add fresh water and 1 heaping tablespoon alum. Simmer slowly 1/2 hour. Drain add fresh water plus 1 tablespoon ginger. Simmer slowly 1/2 hour. Drain. Make syrup of 1 pint vinegar, 1 pint water, 3 pounds sugar, 1 teaspoon stick cinnamon, 1 teaspoon whole cloves, 1 teaspoon celery seed, 1 tablespoon whole allspice. Add drained pickles slowly, simmer 1 hour or until pickles are clear.
