4-1/2 pounds crab apples
2-1/2 cups vinegar
2 cups water
4 cups sugar
1 tablespoon whole cloves
3 3-inch sticks of cinnamon
1 teaspoon powdered ginger
Red food coloring

Directions:
Directions:
Bring vinegar, water and sugar to boil. Add food coloring and spices tied in a bag. Cook 1/2 of apples in syrup for 2 minutes. Remove and repeat the other half. Pour syrup with spice bag over apples and let stand over night. Next AM remove spice bag. Pack apples, drained, in hot jars. Bring syrup to boil and pour over apples. Adjust lids and process in boiling water bath for 30 minutes.
