1 pound cooked ground beef
1 packet taco seasoning
2 tomatoes thinly sliced
1/2 cup chopped onion
1 cup thick and chunky salsa
Shredded Colby cheese
4 burrito size flour tortillas
1 can refried beans

Directions:
Directions:
Preheat oven to 425. Mix some cheese, beef, chopped onion, salsa, and taco seasoning in a bowl. Arrange tortillas on a cookie sheet in a circle so that they all overlap in the middle. Spread the refried beans over the tortillas starting in the middle and working your way out. Spoon beef mixture in the middle of the tortilla circle. Fold edges of tortillas up over beef mixture in an envelope form.
Put the tomato slices over top of the envelope as a weight and garnish, then sprinkle shredded cheese over the top. Bake 18 - 20 minutes or until cheese is melted and the tortilla is brown.
Serve with shredded lettuce, olives, sour cream, etc.
