5 cups cooked carrots
1/2 pound Velveeta
1/3 cup butter
Small onion diced
Ritz cracker crumbs

Directions:
Directions:
Saute onion in butter. Layer carrots and cheese, pour onion butter mixture over all, top with Ritz crumbs and bake at 350 for 1 hour.
