4 c diced zucchini (about 3 medium)
1/2 c chopped onion
1 clove garlic, crushed
2 tbsp butter melted
2 tbsp all-purpose flour
1 tsp salt
1 (5 oz) can evaporated milk
1/2 c sour cream
1/2 c (2 oz) shredded cheddar cheese

Directions:
Directions:
Sauté zucchini, onion, and garlic in melted butter in a large skillet 5 minutes or until vegetables are crisp-tender; remove from heat. Sprinkle four and salt over sautéed vegetables, tossing gently to combine. Stir in evaporated milk, sour cream and cheese. Spoon zucchini mixture into a 1 qt casserole. Bake at 375º for 20 minutes or until cheese melts and mixture is hot and bubbly.
