6 large ripe tomatoes
Long grain wild rice
1/2 lb. mozarella cheese
Parsley
Parmesean cheese
Salt and pepper
Oil

Directions:
Directions:
Cut off top of tomatoes and scoop out insides. Mash up insides. Add dash of salt to shells. To mashed-up tomatoes, add 1 1/2 T of rice for each tomato. Add mozarella, cut up in small pieces. Add 2 T parsley, dash of salt and pepper, Add 1 T. oil to bottom of pan. Roast at 350 for approximately 50 mins. You want the rice to cook but be careful not to burn the tomatoes..
