1 egg
1 c milk
1/4 c oil
2/3 c sugar
1/4 tsp cinnamon
1/2 tsp salt
1 tsp lemon juice
1/4 tsp vanilla
2 c sifted flour
3 tsp baking powder
1 c fresh finely chopped peaches

Directions:
Directions:
Beat together egg and milk. Add oil, sugar, salt, cinnamon, lemon juice and vanilla.

Measure sifted flour and sift again with baking powder. Fold flour mixture and peaches into liquid ingredients until flour is dampened but lumpy. Fill greased muffin tins 2/3 full. Bake at 450 about 15 min.
