2 1/2 c. cubed French bread (about 3 1 oz. slices)
2 c. cubed tomatoes
1/4 c sliced shallots
2 t. extra virgin olive oil
2 t. balsamic vinegar
dash salt
1/2 c chopped fresh parsley
1 c. solid white tune fish, drained

Directions:
Directions:
Preheat oven to 325. Place cubed break on baking sheet and heat for 10 minutes or until lightly browned. Combine tomatoes, shallots, oil, vinegar, andd salt in a large bowl. Cover and let stand at room temperature for an hour.l Stir in bread cubes and parsley. Drain tuna and mix gently.

I use day old bread and skip the part where you brown the bread. May use any kind of viinegar. Nice to serve at lunch.
