3 quarts peeled, chopped tomatoes
3 large peppers, chopped
3 Jalapeno peppers, chopped
4 medium onions
4 large garlic cloves, minced
12 to 18 ounces tomato paste
1 cup white vinegar
1 teaspoon whole oregano
3 tablespoons salt
1 tablespoon cayenne pepper (more for heat, less for mild)

Cook all the above ingredients down. Jar and seal. Hot water bath the jars for approximately 10 minutes.
