3 matzos
2 eggs
2 tablespoons water or milk
1/4 teaspoon salt
Dash pepper

Directions:
Directions:
Break matzos into pieces. Cover with water and then pour water off immediately. Press excess water out of matzos. Melt about 2 tablespoons butter in a skillet and add matzo and fry until lightly toasted. Beat eggs with remaining ingredients. Pour over matzos and fry, stirring frequently, until eggs are set.
