1 2/3 c canned crushed pineapple w/ syrup
water
1 envelope Knox unflavored gelatin
1/4 tsp vanilla
1/2 c flaked coconut
2 1/2 c whipped carnation instant (directions on pkg)

Directions:
Directions:
Measure 1 2/3 c canned pineapple - drain syrup and add water to make 1 cup liquid. Blend syrup -water mixture with Gelatin in a small saucepan. Place over low heat, stirring until dissolved. Add crushed pineapple and vanilla. Chill to consistency of unbeaten egg whites. Fold gelatin mixture and 1/2 c coconut into whipped carnation mix. Make ready in advance or just before serving as pie, tart, meringue filling, topping etc. or in individual glasses. Chill slightly before serving.
