3 1/2 cups or 1lb bag of dried diced fruit (Trader Joes)
1 lb mixed whole nuts (Trader Joes)
3/4 c sugar
3/4 c flour + 2 tbsp
1 tbsp Baking Powder
2 eggs +2 whites
2 tbsp Amaretto or Brandy + 2 tbsps Vanilla
(cinnamon optional)

Makes 2 loaves

Directions:
Directions:
Mix by hand dry ingredients, then add eggs.
Line 2 loaf pans with parchment or wax paper.
Bake 1 hour at 325.
Test with toothpick (edges brown).
Cool 2-3 hours or overnight.
Makes 2 loaves.
