Caramel Pecan Cookies Recipe

1 c shortening
1 1/2 c brown sugar
1 egg beaten
1 tsp vanilla
1/2 tsp
2 tsp baking powder
2 c flour
about 1/2 cup pecans - chopped fine

2 c sugar
1 c milk
3 tbs butter
1 tsp vanilla

Make caramel icing first:
Put sugar and milk in saucepan, heat thoroughly until mixture starts to carmelize. Add butter and vanilla and cook slowly until thick and carmelized. Set aside.

Cream shortening add sugar and cream. Then add eggs, vanilla. Add sifted flour, baking powder and salt. Form into roll about 2" in diameter. Wrap in wax paper. Place in refrigerator. Slice and bake as needed in a moderately hot oven. Top with caramel icing.
