10 tbs butter 7/8 c sugar 4 egg yolks 1 c crushed pineapple 1/2 c soft wheat flour (sifted w/ baking powder 3 times) 3 tsp baking powder 1 tsp vanilla 1 c grated coconut 1 egg white (whipped)
Cream butter and sugar. Add egg yolks. Heat until light - add pineapple (with juice) then flour/baking powder mix. Add vanilla and 1/2 coconut. Fold in egg white. Put remaining coconut over top of cake and bake in oven at 350º.
