Slice potatoes 1/16 in thick Soak in cold water for 2 hours Dry on paper towels Place a layer of sliced potatoes on the bottom of a cast iron skillet. Spoon on clarified butter and salt & pepper. Redo the next layer Place in oven at 425 for 45 minutes Press potatoes down and place in oven @ 500 for 10 more minutes. Flip onto a platter for serving
