2 skinless and boneless chicken breasts
salt and pepper
2 T olive oil
1/4 c. white wine
2 t. capers
juice from 1 lemon
1 t butter

Directions:
Directions:
Rinse chicken and pat dry.
With your knife parallel to the chicken breast, slice in half through the middle to make it half as thick. Place slice between 2 layers of plastic wrap and pound until 1/4 inch thick. Season with salt and pepper. Pour olive oil in skillet and brown for 2 minutes on each side. Set aside in a warm over.
Reheat the skillet over medium heat. Add wine and reduce for 2 mins. Stir constantly. Stir in capers and lemon juice. Remore from heat and add butter, stirring untilo melted. Pour sauce over chicken.
