1-2 cloves chopped garlic
1 cup chopped onion
1 cup chopped green pepper
1 tbsp. olive oil
1 28 oz. can tomatoes
1 4 oz. can sliced mushrooms
1 21/4 oz. can ripe olives
2 tsp. dried oregano
1 lb. hamburger
12 oz. spaghetti, cooked
2 cups shredded cheddar cheese
1 can mushroom soup, undiluted
1/4 cup water
1/4 cup grated parmesan cheese

Cut up tomatoes with juice. Drain mushrooms. Drain and slice ripe olives. Cook spaghetti in salted water and drain. Set aside. In large skillet saute onions and green pepper. Remove and set aside. Add hamburg to skillet; brown and drain. Add garlic (optional) in last few minutes to cook it a little. Return onion and pepper to skillet plus tomatoes, mushrooms, olives, and oregano. Simmer uncovered for 10 minutes. Grease or spray a 9x13 baking dish. Put in 1/2 of spaghetti and top with 1/2 of vegetable mixture. Sprinkle on 1 cup of cheddar and then repeat layers. Mix soup and water together and pour over casserole. Sprinkle with parmesan and bake, uncovered, for 30-35 minutes in preheated 350 degree oven until heated through.

Edith's notes: Doris has been a friend since she and her family moved to West Haven, CT in the 1950's. She is a talented cook and creative hostess. She now plays in the Bell Choir and volunteers at Milford Hospital. Doris is also part of our New Year's Group which has been celebrating for about 50 years.
