4 T. butter
1 c. chopped onion
1/2 c.chopped red bell pepper
3 (10 3/4 oz) cans of cream of potato soup
1 (10 3/4 oz) can cream of celery soup
4 c. fresh for frozen corn
4 c. milk
1/4 c. chopped fresh green chilies
1/2 tsp. white pepper

Directions:

Melt butter in a stockpot over medium-high heat. Cook onion and pepper until tender. Reduce to medium heat and stir in soups and corn. Mix well. Add milk gradually, stirring to mix well after each addition. Stir in green chilies and pepper. Simmer, stirring frequently for about 20 minutes.

Can also add 1 c. chopped cooked shrimp, lobster or crabmeat just before serving. Sprinkle a small amount of chopped fresh cilantor over chowder.
