2 tbsp. olive oil
2 carrots, chopped
1 onion, chopped
2 celery stalks, chopped
1 garlic clove, minced
1 lb. tomatoes
6 cups chicken broth
1 cup cauliflower florets
1 large zucchini
1/4 lb. slender green beans
1 cup cooked cannellini beans
salt
freshly ground pepper
2 tbsp. fresh basil, chopped
freshly grated parmesan

Seed and chop tomatoes. Cut cauliflower into small florets. Cut zucchini into 1/2 inch cubes. Trim green beans and cut into 1/4 inch pieces. In large non-reactive pot heat oil over medium heat. Add carrots, onion, celery, and garlic. Cook, stirring often, for 3-5 minutes until onion is softened. Stir in tomatoes and cook for 2 minutes. Pour in the broth, increase heat to high, and bring to a boil. Then reduce heat and simmer, stirring often, for 10 minutes, or until reduced.
Bring a large saucepan of salted water to a boil. Add cauliflower, zucchini, and green beans. As soon as water returns to a boil - drain vegetables. Stir the vegetables into the soup; season with salt and pepper. Simmer for 10 minutes or until vegetables are just tender. Stir in the basil and ladle into bowls. Pass the parmesan!!
