1 1/2 lbs. Italian sausage
1/2 cup chopped onions
1 28 oz. can Italian tomatoes
6 small potatoes
1 cup chopped celery
1/4 cup chopped parsley
2 tbsp. chopped celery leaves
7 cups water
1 tbsp. lemon juice
2 beef bouillon cubes
2 tbsp. sugar
1 bay leaf
1/2 tsp, dried whole thyme
1/4 tsp. pepper

Cut sausage into 1/4 inch slices and brown in large dutch oven. Add onions and cook, stirring constantly, until tender. Add tomatoes, undrained and chopped. Add potatoes, peeled and cubed 3/4 inch. You may use 1/3 cup ditalini pasta instead of potatoes if you desire. Then add remaining ingredients. Bring to a boil, cover, reduce heat, and simmer 45 minutes. Be sure to remove bay leaf.
