20 large tomatoes (approximately 5 quarts)
4 large carrots
2 stalks celery
1 green pepper
1/2 cup parsley
4 cups chopped onions
3 tablespoons sugar
2 tablespoons salt
3/4 teaspoon pepper
1 jalepeno pepper (optional)

Directions:

Blend ingredients, bring to boil and simmer for 30 minutes.

Can be put through a sieve for juice (like V8), may be used for a Chili base, soup or spaghetti sauce. Freezes very well. I add an Jalepeno pepper for extra zing.
