1 C. soft white (cow) cheese, like cottage cheese

Optional: 1-3 T. add sour cream or butter/margarine

1 T. (or to taste) pressed fresh garlic

Dash salt

Optional: 1 tsp. finely chopped dill

To serve: Cherry tomatoes, or small tomatoes, or bread.

Take cheese, mix it with a fork until it gets soft. Note: if the cheese is too hard or dry mix in a little mince the cheese with soft butter (not melted) or sour cream.

Add salt and minced garlic (dill if desired) and mix.

Using small spoon and your hands, roll into small balls and set on plate, if you wish to use as 'spread' for guests to spread on bread. Or, put a spoonful of the cheese mix on top of half a cherry tomota or small tomato cut in half (if using cherry tomatoes, cut a thin slice off each 'bottom' half of the cherry tomato so that it will stand on a plate without rolling over; the top end - stem end - of the cherry tomato will stay flat on the plate). Optional: you can cut out a small scoop of the tomato and put the cheese spread inside that, if you want the tomato to hold more cheese.
Put these in the refrigerator for 15-20 minutes.

I like garlic, so I am generous with the garlic, and have used both minced and pressed garlic, and the longer it sits (even overnight) the greater the garlic taste.
