4 c. cubed cooked (skins removed) potatoes

1/4 c. oil (preferably olive oil)

2 T. vinegar)

3 hard boiled eggs, cut up

1 cup diced celery

2 to 3 T. chopped onion

1-2 T. pickle relish/diced pickles

1/2 C. salad dressing or mayonaisse

Optional: 1/2 C. diced meat (ham or salami)

Directions:
1. cut potatoes while warm, marinate in oil and vinegar dressing for 1 to 2 hours.
2. Add remaining ingredients, season with salt and pepper to taste.

Serve in lettuce-lined bowl if desired. Garnish with 1 hard-booked egg, parsley and pimento if desired.

Variations: Can add 3 T. chopped green pepper, pimento or sweet pickle. Can add 1/4 cup grated carrots, sliced radishes or diced cucumber.
