3/4 lb. mushrooms
1/2 a large onion, chopped
1/2 c. red or green pepper, if desired, chopped
1/4 c. butter or margarine, melted
1 1/2 lb. pepper jack cheese, shredded
1 lb. hot sausage, crumbled and browned
12 eggs, beaten
2 c. milk
1/2 c. flour
1 T. parsley, minced
1 t. seasoned salt
1 t. pepper
1/2 c. bacon, cooked & crumbled for garnish

Grease a 9X13" baking dish. Saute mushrooms, onions and peppers in butter until soft, not brown. Put half of the cheese in the prepared dish. Add sauted vegetables then the cooked sausage and then the remaining cheese. May cover and refrigerate overnight at this point if desired. When ready to bake, preheat oven to 350. Beat eggs together with milk, flour and seasonings. Pour into the dish over the previous ingredients. Top with bacon if desired. Bake for 45 min. to 1 hour until center is set and top is browned. Let sit 5 min. before serving.

May use plain Monterry Jack cheese or a mixture of plain and pepper jack to adjust the spiciness. Also, may use mild, hot or medium sausage. Very good breakfast casserole or for a family brunch
