3 C Flour
2 t Baking Soda
2 t Baking Powder
1 t Salt
3 t Cinnamon
4 eggs
2 Cups sugar ( roughly)
1 1/2 cups vegetable oil
1 15 oz. can pumpkin
1 tsp. vanilla extract
1/2 cup raisins
1 Cup chopped nuts

Directions:
Directions:
Preheat oven to 350. Sift flour, baking soda, baking powder, salt, and cinnamon together. At high speed, beat eggs and sugar. Blend in dry ingredients alternately with pumpkin. Add vanilla. Stir in nuts and raisins. Grease and flour 3 1 Lb. coffee cans. Pour batter in evenly (a little over 1/2 full). Bake for 1 hour. Cool on racks, slice and serve with cream cheese.
