1 c sifted all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/4 c sugar
1 c oats (quick or old fashioned, uncooked)
3 tbsp vegetable oil or melted shortening
1 egg, beaten
1 c milk

Directions:
Directions:
Sift together flour, baking powder, salt and sugar. Stir in oats. Mix in oil, egg and milk. Fill greased muffin tins two thirds full. Bake in preheated hot oven, 435, about 15 minutes.

Variations: Fruit: add about 1/4 c raisins or chopped dried fruit with the oats.

Cinnamon Sugar: Combine 2 tsp flour and 1 tsp cinnamon and 1 tsp melted margarine. Sprinkle over muffins before baking.
