2 cups sugar
1 cup canola oil
3 tsp. vanilla extract
2 cups flour
1 tsp. baking soda
2 cups grated zucchini
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1 cup chopped nuts

Grease 2 loaf pans. Preheat oven to 325F. Mix all ingredients together and pour into greased pans. Bake 1-1.5 hours.
