1 Lb salmon cooked and flaked
2 med. sized potatoes boiled and mashed
1/4 c. diced onion
1/2 c. diced red/green peppers
1 Tbs parsley
1 egg (1/4c egg sub.)
1 tsp salt
1/4 tsp Tabasco
1/2 c. cracker crumbs (coating)

Directions:

Mix all ingredients except cracker crumbs and Pam. Form into 6-8 cakes. Coat with cracker crumbs. Spray with Pam. Broil on each side ~10min.
