2 eggs
1 c. sugar
2 Tbsp margarine
2 Tbsp flour
1 tsp vanilla or lemon
1 1/2 c. mashed potatoes
1 1/2 c/ milk
nutmeg (optional)

Directions:
Directions:
Mix together eggs, sugar, margarine, flour and vanilla or lemon. In a large bowl mix potatoes and milk. Add the first mixture to potatoes and mix well. Pour into a 9-in. unbaked pie crust. Bake at 350 F until knife inserted in the middle comes out clean. Optional sprinkle with nutmeg before baking.
