1/3 c. cashews
3/4 lb. boneless beef sirloin
1/2 lb. bean sprouts
1 bunch scallions
1 large onion
4 large mushrooms
1 green pepper
1 red pepper
1 clove garlic
2 T. oil
Hot cooked rice

Sauce:
1/4 c. soy sauce
1/3 c. sherry
1 T. cornstarch

Directions:
Directions:
Prepare vegetables as desired. cut beef in 1/2" slices. Heat oil. Add beef and garlic and fry. Remove meat and add peppers, onion and mushrooms. Stir fry 3 minutes.
Sauce:
Combine soy sauce, sherry and cornstarch. Cook, stirring constantly until clear. Stir in vegetables and heat. Fold in bean sprouts and 1/3 c. nuts. Fold in beef. Sprouts should be crisp and tender. Serve with white rice or fried rice.
