German Potato Salad Recipe

2 1/2 lbs. Yukon Gold potatoes
1 onion, diced
1 cup hot vegetable or chicken stock
1 tbsp Dijon mustard
1 tbsp chopped parsley
1/4 cup cider vinegar
1/4 cup oil
1 tsp salt and pepper
Crispy fried bacon bits (optional)

1. Boil the whole potatoes and then peel and slice them
2. Bring vegetable or chicken stock to a boil
3. Add all the other ingredients and mix
4. Pour over the potatoes and let it marinate for a couple of hours or overnight in the fridge
5. Garnish with sliced cucumbers or boiled egg
