1T. butter or margarine
1 small thinly sliced onion
1/2 lb. thinly sliced mushrooms & stems
1T. flour
2c. Herb ox sodium free chicken bouillon
2c. of cold water
salt and pepper to taste
1/3c. cooked soup macaroni or rice (cooked)
grated Pecorino Romano cheese

Directions:
Directions:
Melt butter, add onion and mushrooms, cook slowly 15 minutes. Add flour, chicken bouillon, and 2c. of water slowly and bring to a boil. Cook in double boiler 20 minutes. (If a thicker soup is desired, mix additional flour in a little water and stir into soup). Add cooked rice, top with grated Pecorino Roman cheese, season with salt and pepper and enjoy!
