1/4c. olive oil
1/2 stick margarine or butter
2 onions. chopped
5-6lbs. white or russet potatoes
1 tbsp parsley
Salt & Pepper to taste

Directions:
Directions:
Cover bottom of large frying pan with olive oil.
Add margerine or butter.
Add onions. Mom holds onion over the pan and cuts into slivers right into pan.
Cut potatoes into small pieces and add to pan.
Add parsley, salt & pepper.
Cook over med-hi heat, stirring occasionally, until potatoes are cooked.
To cook quickly, cover to steam.

For as long as I can remember, Mom has always used this recipe for home fries. They are delicious and can be served with any meal, breakfast, lunch or with your dinner.
