1/2 C. Shortening, (half Butter or Margarine, softened)
1/2 C. Peanut Butter
1/2 C. granulated Sugar
1/2 C. Brown Sugar (packed)
1 Egg
1-1/4 C. all-purpose Flour
1/4 tsp. Soda
1/2 tsp. Baking Powder
1/4 tsp. Salt

Directions:
Directions:
Mix shortening, peanut butter, granulated sugar, brown sugar, and egg thoroughly. Blend in flour, soda, baking powder, and salt. Cover and chill.
Heat oven to 375%. Shape dough into 1-inch balls. Place 3 inches apart on lightly greased baking sheet. With fork dipped in flour, flatten in crisscross pattern to 2 inches. Bake 10 to 12 minutes or until set but not hard.
Variations:
Filled cookies: Make as above, but do not flatten with fork, instead press thumb deeply into center of each ball. Bake 10 to 12 minutes or until set but not hard. Spoon small about of jelly or jam into each thumbprint.
Or instead of filling with jelly, fill with a few chocolate chips, white chips, or caramel chips.
