3 eggs 2 cups sugar 3 cups flour 2 cups peeled and shredded zucchini 1 teaspoon baking soda 1/4 teaspoon baking powder 1 cup cooking oil 3 teaspoons vanilla 1 teaspoon salt 3 teaspoons cinnamon Raisins and nuts, if desired
Beat egg until light and foamy. Add oil, sugar, zucchini and vanilla. Mix well. Add dry ingredients that were sifted together blend well. Add nuts and raisins divide into 2 loaf pans and bake 1 hour in 325º oven.
