3 eggs
2 cups sugar
3 cups flour
2 cups peeled and shredded zucchini
1 teaspoon baking soda
1/4 teaspoon baking powder
1 cup cooking oil
3 teaspoons vanilla
1 teaspoon salt
3 teaspoons cinnamon
Raisins and nuts, if desired

Directions:
Directions:
Beat egg until light and foamy. Add oil, sugar, zucchini and vanilla. Mix well. Add dry ingredients that were sifted together blend well. Add nuts and raisins divide into 2 loaf pans and bake 1 hour in 325 oven.
