2 cups sifted flour
3 teaspoons baking powder
4 tablespoons sugar
1/2 teaspoon salt
1 egg, beaten
1 cup milk
4 tablespoons melted shortening

Directions:
Directions:
Heat the oven. Set for a moderately hot oven - 375. Grease bottom of muffin cups.
Sift flour, then measure. Measure the baking powder, sugar and salt. Add to the measured flour and sift again in the mixing bowl. Make a well in center of the flour. Beat the egg until yolk and white are well mixed. Add milk and melted shortening to the egg. Add the milk mixture all at once to the dry ingredients. Now stir until all the ingredients are just blended together. Do this quickly. There may be a few specks of flour and the batter looks slightly lumpy but don't worry about that. If you over-stir or beat this batter trying to make it smooth you'll get tunnels in the muffins and they'll be heavy and tough. Fill greased muffin cups 1/2 to 2/3 full. Bake 15 to 20 minutes.
