3 eggs
1 cup salad oil
2 cups packed brown sugar
2 cups grated raw, unpeeled zucchini
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 tablespoon vanilla
1 cup chopped nuts
1/4 teaspoon baking powder

Directions:
Directions:
Beat eggs. Add oil, sugar and zucchini; mix well. Stir in flour, salt and baking soda. Fold in vanilla and nuts. Pour into 2 greased and floured loaf pans. Bake in 350 oven one hour.
