1 lb. cream cheese
3 eggs
1 lb. ricotta cheese (15oz. container OK)
1-16oz. sour cream
3 tsp. corn starch
2 tsp. vanilla extract
2c. sugar
1 tsp. cinnamon (optional)
1/3c. melted butter or margarine
2 1/2c. graham cracker crumbs

Grease a 10" springform pan.
Make a crust by mixing together graham cracker crumbs, 1/2c. sugar, cinnamon and melted butter and press into the bottom of springform pan.
Make the filling by mixing cream cheese, 1 1/2c. sugar and eggs. Add ricotta, sour cream, corn starch and vanilla.
Bake at 350F for 1 hour and turn oven off (WITHOUT OPENING IT). Leave the cake in the oven for one more hour. Allow a day to chill in refrigerator before serving.
