2 large eggs
6T. olive oil
1c. dried Italian-style bread crumbs
4 center-cut pork loin chops (1/2 to 3/4 inch thick)
3/4c. grated Parmesan cheese
salt and freshly ground pepper
lemon wedges

Directions:
Directions:
Whisk the eggs to blend in one dish. Place bread crumbs in another dish. Place the cheese in a third dish. Sprinkle the pork chops with salt and pepper. Coat the chops completely with the cheese. Dip the chops into the eggs, then coat completely with the bread crumbs.
Heat 3T. of oil in each of 2 large skillets, over medium heat. Add 2 chops to each skillet and cook until golden brown, about 5 minutes per side.
Serve with lemon wedges. Serves 4
