2 pounds lean ground beef
3 tablespoons quick tender meat cure
1/2 teaspoon coriander seed
1/2 teaspoon onion salt
1/4 teaspoon garlic powder
5 drops liquid smoke
1 cup water
1/2 teaspoon course ground pepper
Dash of nutmeg
1 teaspoon whole mustard seed
2 tablespoons sugar

Mix and form into rolls 2 inches in diameter. (Makes 4 rolls) Seal in aluminum foil and refrigerate 24 hours. Leave in foil and boil for 1 hour. Open foil and drain. When cool, wrap in plastic wrap.
