3 1/2 lb. rump roast, discard most fat (leave some for browning)
jigger of vinegar
2-3 Vidalia onions, diced or sliced (your preference)
3 ginger snaps
3 large carrots, cut into large pieces
1 bay leaf
salt and pepper to taste
water

Directions:
Directions:
Before starting, prepare water and flour for making gravy later.
Brown meat on all sides in deep medium pot over medium heat. Turn continuously until all sides are browned.
Add jigger of vinegar. Add onions, crumbled ginger snaps, bay leaf and pepper. Add water - 2" from bottom. Cover and simmer 1 hour, low heat. Turn roast over and simmer another hour (add more water if necessary). Add carrots and simmer additional half hour. Remove meat and bay leaf. Thicken gravy with water/flour mixture. Serve over noodles.
