1 box Uncle Ben's Wild Rice
2 chicken breasts - cubed
1 c. button mushrooms - sliced or whole
2 cans cream. of mushroom soup
1 sm. can chicken broth
2 c. water or milk
2-3 T.butter
1 T. oil

Directions:
Directions:
Prepare Uncle Ben's Wild Rice in a med. sized pot.
Sauté' mushrooms, chicken, butter and oil (to keep the butter from burning) in a frying pan until fully cooked. Add chicken and mushrooms to prepared rice. Add mushroom soup, broth, and water (or milk) to the pot and stir. Simmer until it comes to a low boil. Serve with garlic bread sticks to dip.

It's amazing what I come up with to avoid going to the grocery store. Scaring my family with various concoctions, this recipe was a pleasant surprise for most of them: Bryan had to pick out the mushrooms.
