1 package soup mix
2 quarts water
1 ham hock
1 large onion, chopped
1 clove garlic, minced
1 tsp chili powder
1 large can tomatoes (16 oz)
Optional: 3 carrots, potato, celery rib, cooked and diced

Directions:
Method 1: Place washed beans in large kettle. Cover in water and add 2 tbsp salt. Soak overnight. Drain and add 2 quarts of water and ham hock. Simmer 2 hours. Add onion, celery and seasonings and simmer another hour.

Method 2: Reduce water by 1 cup. Place all ingredients in covered 3 quart crock pot. Cook on high for 7 hours or until beans are tender. Before serving add juice of 1 lemon and top with grated cheddar cheese and sour cream.

Method 3: wash beans thoroughly. Place beans in a pan or kettle, cover with water and 2 tbsp salt. Soak overnight. In the morning, drain, add 2 quarts of water, add ham, ham hocks or ring of smoked sausage chopped. Bring to a boil. Simmer slowly 2 1/2 or 3 hours. Add 1 large onion, chopped, 1 large can tomatoes, red pepper, or 1 tsp chili powder, juice of 1 lemon, l clove minced garlic, salt and pepper to taste. Simmer another 30 minutes. Add contents of ham packet one or two minutes before cooking is completed.
